Dressing
¼ cup lemon juice Mix all the ingredients. Salad
2 peaches, cored and sliced Divide the greens and arugula between 4 salad plates. Top with peaches and tomatoes. Sprinkle with feta and mint. Drizzle the dressing over the salad.
Niki's recommendation: Serve with grilled pork or chicken. |
