Apple Pear Buttermilk Bran Muffins


1 1/2 cups unprocessed miller's wheat bran (not cereal)
1 cup buttermilk
1 egg
1⁄4 cup brown sugar
1/4 cup honey
1 tsp vanilla
1/2 an Apple Pear; peeled, cored, and finely grated (approximately 5 oz)
2 Tbsp oil
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup flour
1⁄2 of an Apple Pear; peeled, cored, and diced
1/3 cup pecans (optional)


Preheat oven to 375 ̊F and prepare muffin tins by lining them or greasing them.

In a bowl, mix together the bran and buttermilk. Set aside for 10 minutes.

Mix the brown sugar, egg, honey, vanilla, grated Apple Pear, and oil until combined. Add in the bran mixture and stir until combined.

In a separate bowl, mix together the baking soda, baking powder, salt and flour. Slowly stir this mixture into the bran mixture until combined.

Fold in the diced Apple Pears and Pecans. Fill muffin tins to 2⁄3 of the way full and bake for 15-20 minutes for full size muffins or 12-15 minutes for mini-muffins.

Insert a toothpick to check for doneness - it will come out clean when done.

Makes approximately 12-14 full size muffins.
