3-4 lbs corned beef (in bag with juices, pre-brined, cook as directed)
12 slices rye bread or your preferred bread
1 bag of coleslaw mix
1 Tbsp smooth, spicy mustard
In a large bowl, combine mustards, vinegar, honey and mayonnaise. Whisk together.
Add salt and pepper to taste, if desired.
Toss with the coleslaw mix and Apple Pears to create the slaw.
Assemble the sandwich. Start with a slice of rye and add a layer of corned beef, cut to your desired thickness. Add a generous helping of Apple Pear slaw and finish off with another slice of bread.
