2 cups flour
1 cup butter, softened to room temperature
1 cup sugar
1/2 tsp baking soda
4-5 apricots, pitted and mashed
5 Tablespoons apricot jam
Preheat oven to 350˚F
In a bowl, mix together the flour, butter, sugar, and baking soda by hand until dough forms.
In a separate bowl, mix together the mashed apricots and apricot jam
Spread 1/2 the dough on the bottom of a 9x13 pan.
Spread the apricot mixture over this.
Cover the top with the remaining dough - you can crumble it over the top, or flatten it and lay it over the top, whichever you prefer.
Bake for 25-30 minutes until a light brown color.
Can be served warm, or if you prefer a chewier bar, you can cut them into squares and freeze them before serving.
