Chef's Corner: Michael Maddox

Our friends at the American Academy of Chefs and the American Culinary Federation will be creating some fabulous recipes for us, which will be featured on our Chef's Corner on a rotating basis - as well as a little bit about each of them. Our featured guest  for fall 2011- summer 2012 was Chef Michael Maddox of Le Titi De Paris in Arlington Heights, Illinois.

About Michael Robin Maddox

Michael Robin Maddox was born August 21, 1970 in Princeville, Illinois.  Raised in agricultural environment, with an early appreciation for food.  His family raised soybeans, corn, hogs, cattle and chickens.  They also grew their own vegetables, canned, butchered, smoked and cured their own meats.  During his youth, Michael worked at a local restaurant, progressing from dishwasher to lead cook.

Michael attended Kendall College in Evanston, Illinois and received his Associates in March 1990.  He served as a Culinary Teaching Assistant for 1 ½ years during his schooling, and went on to receive his B. A. in March 1993.  Since March 1993, he has held the position of chef de cuisine of Le Titi de Paris and became chef/partner in 1999. Michael and his wife Susan purchased Le Titi De Paris in 2004 from Pierre and Judith Pollin who retired after 32 years.

Michael is married and resides in Illinois with his wife Susan, daughter Emily and son Bryce.  Mr. Maddox is a member of the Pastry Alliance and the ACF.  His hobbies and interests include gardening, fishing and alpine skiing.

A few of his awards and recognitions include:

  • 2002/2003 - His restaurant was ranked number one among the French Classic list and received a score of 28 in the "Zagat Survey of Chicago Restaurants”
  • 2006 - Named one of the Top 50 Chefs in Chicago Magazine
  • 2007 - Listed as a Zagat Top Celebrity Chef

Restaurant Awards and Recognition

  • Recipient of Chicago AAA Motor Club "Four Diamond Award" annually since 1991.
  • Recipients of Distinguished Restaurants of North America "DiRoNA Award" annually since 1992.
  • Recipient of The Wine Spectator's "Best of Award of Excellence" annually since 1985.
  • Inducted into "National Restaurant News Fine Dining Hall of Fame" in 1995.
